Pitaya Rose Cinnamon Roll

INGREDIENTS:

makes 2 buns

β˜†1/3 c flour (regular or GF)

β˜†2 tbsp yogurt (I used strawberry rose @culinayogurt vegan yogurt)

β˜†2 tbsp @elliesbest pitaya powder (code: sloane10 πŸ’°)

β˜†2 tbsp water

β˜†1.5 tsp baking powder


filling β€”

β˜†1 tsp brown or coconut sugar

β˜†1 tsp maple syrup

β˜†1/4 tsp (or more) cinnamon

β˜†1/2 tsp coconut oil


topping β€”

β˜†2 tbsp coconut cream

β˜†1 tsp maple syrup


METHOD:

β˜†mix pitaya powder with water to dissolve. mix flour with yogurt, baking soda, and pitaya liquid. add another tbsp of flour if needed. you want the dough to form a ball and not be too sticky. flatten dough so that it’s ~3 inches wide and 1/4 inch thick. put in the fridge for an hour of freezer for 15 min.

β˜†mix filling ingredients. spoon onto dough and ROLL! slice into 2 rolls

β˜†bake at 350 for 20 min.

β˜†mix coconut cream with maple syrup and spread on top!πŸ”₯πŸ’―πŸ’₯
