Vegan Stuffed Greek Peppers

INGREDIENTS:
✨2 large tomatoes
✨2 large bell peppers
✨1/2 c rice
✨1/2 sweet yellow onion
✨large handful of spinach or kale
✨1/4 c fresh chopped parsley
✨1/4 c pine nuts
✨1/4 c water
METHOD:
👉🏼cut off tops of tomatoes & peppers and careful scoop out insides. keep tops & tomato pulp. pour 1 tbsp avocado oil into pot and sauté chopped onions until transparent. add dry rice & 1/2 c water. cover and simmer on low until water is absorbed. add chopped tomato pulp, greens, parsley, pine nuts, and pepper to taste. {cont. in caption}
