Spaghetti Squash Boat

A super easy, healthy recipe that will surely be a crowd pleaser!

INGREDIENTS:

☆1/2 spaghetti squash
 
☆zucchini
 
☆bell pepper
 
☆shrimp (I buy it frozen)
 
☆avocado
 
☆olive oil
 
☆sage
 
☆lemon, garlic, salt & pepper

METHOD:
 
☆to cook squash: microwave whole squash for 4 min to soften. cut in half lengthwise. scoop out seeds. spray flesh with avocado oil and lay flesh side down on a lined baking sheet. bake at 400 for 35-40 min.
 
☆for veggies: sautée veggies in olive oil + garlic + salt + pepper + lemon juice
 
☆for shrimp: defrost by letting frozen shrimp sit in a bowl of warm water for ~10 min. season with salt + pepper + garlic. sautée in olive oil for 3 min per side. toss in veggies and finish with sage
