A holiday fav of mine!
(makes ~13 latkes)
☆3 medium potatoes
☆1 yellow onion
☆1/2 c oats
☆1 c oat flour
☆1/2 c almond flour
☆salt & pepper
☆1 tbsp olive oil
☆preheat oven to 425.
☆use a food processor, cheese grater, or cut by hand to shred the potatoes into a bowl.
☆use paper towels or a cheese cloth to remove as much water as possible.
☆grate/chop onion and add to potatoes.
☆add the rest of the ingredients and mix.
☆gather mixture into balls about the size of your palm and flatten on a greased cookie sheet.
☆bake for 15 min.
☆ flip latkes and bake for another 15 min.
☆serve hot with apple sauce + green onions + optional sour cream 🤩👊🏼
