I loveeee tomato soup but can rarely eat it at restaurant because of the heavy cream #lactoseintolerantproblems 🙄 that’s why I made my own for you and me!!
INGREDIENTS:
☆1 tbsp garlic
 ☆1 tbsp olive oil
 ☆1/2 shallot
 ☆1/2 yellow onion
 ☆1/2 c shredded (or diced) carrots
 ☆2 celery
 ☆1 tbsp italian seasoning
 ☆1/2 tsp oregano
 ☆ black pepper
 ☆2 c veggie stock
 ☆1 can (28 oz) peeled tomatoes
 ☆1 c coconut cream (full fat)
 METHOD:
☆heat oil in a large saucepan.
☆chop up veggies.
☆add garlic + shallots + onion to pot.
☆stir and cook for ~3 min until soft.
☆add other veggies + spices + tomatoes + veggie stock.
☆simmer for ~25 min.
☆use a @tenergyofficial immersion blender (or transfer to regular blender) and blend until smooth.
☆stir in coconut cream. garnish with basil
